Instapot Chipotle Adobo Chicken Tacos with Avacado Lime Creme and Cilantro Lime Cauliflower Rice!
Serves 2-3 2 Chicken Breasts 2tsp olive oil 1/2 Onion 2 cloves of garlic 1 Chipotle in Abodo Sauce 1 tsp Chilli Powder 1tsp Joseph-Que "Dom's Magic Dust" 2TBSP Joseph-Que "Grandpa Joe's Honey Chipotle" 1tsp Cumin 1 Can Diced Tomatoes
For Avacado Lime Creme 3/4 cup 0% Fat Greek Yogurt 1tsp Salt 1 Avacado Juice of 1 lime Puree all ingredients together till smooth. Add water 1tsp at a time if too thick.
Cilantro Lime Cauliflower Rice 1 Bag of Riced Cauliflower 1/2 Onion 1 Clove Garlic 1 TBSP olive oil 1 Lime for Juice 1/2 Cup cilantro 1 tsp Cumin 1 tsp Dom's Magic Dust
Directions: Set instapot to saute mode. Season each breast with Grandpa Joe's Honey Chipotle and sear about 3mins a side with 1tsp of olive oil. Remove breasts (dont worry they will be raw inside). Add 1tsp of oil to instapot and cook onions, garlic, chilli powder, cumin, and Dom's Magic Dust till onions are translucent. Turn pot off and add chopped Chipotle and about a tbsp of the adobo sauce it comes packed in plus 1 can of diced tomatoes and your chicken. Set instapot to Poultry setting and cook for 10mins. Remove chicken and shred with two forks. Put instapot back on saute and reintroduce chicken to sauce and mix. Place instapot on warm and serve with cilantro, onions, queso fresco, and Avacado creme.
Rice Instructions: Heat skillet to Medium heat with 1 Tbsp oil oil. Add onion and garlic and cook till translucent. Add Cauliflower Rice to onions and cook for 3 mins. Add juice from lime and add cilantro. Toss together and cook additional 1 min. Remove from heat and serve.
