Grandpa Joe's Shrimp and Grits!

This has to be one of the quickest, easiest, and absolutely delicious dishes. Have dinner on the table in under 30mins. These grits are loaded with butter and cheese. They are then topped with a delicious mixture of BBQ shrimp, Andouille Sausage, and Bacon.



Ingredients:


1 cup chicken broth

1 cup light cream

1/2 cup yellow grits

1/4 cup shredded cheese (jack and cheddar was used)

1/4 cup of water (if needed)

1 Tsp Salt

3 Tbsp Butter

1lb Shrimp 10-15 sized were used in the recipe

1/2 lb Andouille Sausage

2 strips of Smoked Bacon

3 tbsp Grandpa Joes Honey Chipotle or your favorite BBQ rub

1-2 tbsp olive oil

Chopped Parsley


Directions pour chicken broth and light cream in sauce pan. Bring to a simmer and add grits. Reduce till desired consistency and add butter and cheese, stir. If consistency gets too thick and add water slowly till achieving the correct consistency. While grits are cooking chop bacon and cut sausage into wheels. Fry both together in a pan. Remove when cooked. Next clean your shrimp beforehand by removing the vein and shell. Leave tail on for a nice presentation and handle. Coat shrimp with olive oil and your bbq rub. Next fry shrimp in pan that you cooked the bacon and sausage in. Only a couple mins per side. As soon as they turn white and firm up they are done. Next plate your dish by putting grits down then your shrimp, bacon, and sausage on top. Garnish with chopped parsley and devour.
